INTRODUCTION:
Chipotle Mexican Grill serves delicious, fresh Mexican-inspired food -- most of which is naturally gluten free. As a result, many people with Celiac Disease ("Celiacs") such as myself eat there frequently. However, each time I do eat at a Chipotle is a stressful and sometimes dangerous experience because of the serious reactions I get from eating gluten (which is a component of wheat).
THE PROBLEM:
The only food items served by Chipotle that contain wheat/gluten are the flour tortillas...so it should be easy to keep cross-contamination of the wheat/gluten to a minimum. The only thing getting in the way of making Chipotle much safer for Celiacs like myself, and others with gluten intolerance, is the fact that the servers who prepare the food handle the flour tortillas with their hands AND THEN ALSO grab the cheese and lettuce with their hands. They are wearing gloves, but the gloves are not changed between handling the flour tortillas and the cheese/lettuce.
THE SOLUTION:
The solution is SIMPLE. Chipotle should instruct all their servers to use TONGS to serve cheese and lettuce. That way they would not be contaminating the food every time they touch a burrito and then touch the cheese or lettuce. They should also instruct their servers to either never touch the inside of the paper bowls with their gloves, since it's usually the same staff member warming the tortillas and putting the paper bowl (for buritto bowls) on the counter. The staff should also not handle the hard taco shells with their hands unless their gloves have been changed since handling flour tortillas (they could use tongs for this as well).
THE NEXT LEVEL:
If Chipotle gets the message, and if they REALLY want to make their restaurants a safe place for Celiacs and the gluten intolerant to eat, then they should consider working with the Gluten Free Restaurant Awareness Program (GFRAP) run by the Gluten Intolerance Group (GIG), a national association of support groups and restaurants which has standardized procedures in place to assist restaurants who wish to prepare gluten free food safely.
